It’s berry season! I usually buy up fresh cranberries in the fall and freeze them for year round use but this salad is wonderful with sliced strawberries, or tart blueberries or raspberries. Berries are chock full of antioxidants and a great addition to summer detox.

Having to avoid nightshades is frankly annoying.  Back in my pre-Hashimotos days when I was running 20-30 miles per week and cutting whole bags of jalapeños onto every meal I also enjoyed a nice fat burger with mushrooms, blue cheese and hot chips (French fries).

This seems like such a simple recipe to me it’s almost silly to post… but It is one of the main beverages I make in place of coffee-coffee-coffee-coffee-coffee… like i used to drink.  I begin my day with a tablespoon of Rasa Bold and filled with organic swiss water decaf in my stovetop espresso maker, but after lunch I don’t even want to add even a little caffeine.   Caffeine has a 12 hour half life so it’s still in your system at midnight if you drink it at noon.  That was fine when I was young but not now!

So when I make my kids and I some keto hot cocoa to soothe the homeschool day I do it two ways.  For them, I like to use either chocolate collagen, froth and then add milk, or Keto MCT + Collagen  like the ones here in my Fullscript.  Sometimes I’ll add medicinal mushrooms to theirs too… but I ALWAYS add it to mine.  These mushrooms are anti-inflammatory, brain boosting & immune regulating.  Not to mention they give you a boost of clean energy and help your body adapt to stresses.  Hence why we call them adaptogens.

I have a creamer that I make myself that consists of coconut milk powder, MCT powder, collagen and Lion’s Mane.  You can leave out the collagen if you’re vegan, but I like the extra hit of protein and the froth that comes with it.  We have the frother that comes with this starter set.

For the Cocoa, I use either Myers Way Paleo Protein with my creamer and a scoop of OM Mushroom Master Blend and then froth it with a couple drops of dōTERRA Peppermint… (dōTERRA ingestible oils are marked with a nutritional label) or of late I have favored Ancient Nutrition Elixer Superfood Cocoa, which is a keto hot cocoa with MCT (no collagen), Ashwaganda, Reishi and Chaga mushrooms for stress reduction, immune boosting power and metabolism support.  It’s sooo good. And if you can’t have peppermint, a really fun, substitute is doTERRA on guard essential oil, which makes for a spicy cocoa 🙂

Adaptogen Keto Hot Cocoa with Peppermint

Equipment

  • Stick Milk Frother

Ingredients
  

My dairy free keto creamer (mixed ahead of time)

  • 1/3 cup coconut milk powder
  • 1/3 cup Vital Proteins Collagen
  • 1/3 cup MCT Oil Powder
  • 1-2 Tbsp Lion’s Mane Powder

For the Cocoa:

  • 1 scoop Ancient Nutrition Elixir OR Organ Keto MCT + Collagen Chocolate
  • 1-2 Tbsp keto creamer
  • 1 scoop OM Mushroom Master Blend
  • 2 drops dōTERRA Peppermint
  • 1 cup boiled water divided

Instructions
 

For the Keto Creamer:

  • I tend to eyeball it... but add ingredients to a jar, approximately in thirds and then add the lion’s mane, secure the lid and shake to mix.

For the Cocoa:

  • Add the dry ingredients and peppermint oil to the mug, fill half way with hot water and froth with a frother wand. Fill the rest of the way with hot water and enjoy!

Anyone who knows me or has hung around this blog long enough knows I am obsessed with tahini cookies.  It took me years to develop a cookie that had the chew, and texture of what I grew up knowing as a good and proper cookie.

Who loves guac?!  Personally, I love guacamole… but I truly do not enjoy the speed at which I have to consume it so it does not turn brown.  Once in a while I will make fermented kefir guac which doesn’t brown, but I can no longer tolerate dairy so lacto-fermentation is out.  I recently took a trip to Middle Tennessee and met some fermentation hippies in posh Brentwood & Franklin but I had to leave off trying most of their goods because of nightshades & dairy.  As soon as I got home I took my bag of mushy avocados and fermented onions and whipped up a gorgeous batch of nightshade free fermented guac.  I ate it over two days.  Not a hint of browning.  Yum.

If you’re all good with nightshades, which I am these days thanks to a whole lot of gut healing, just add in as many diced jalapeños as you like!  One for mild, 2-4 for spicy.

Fermented Nightshade-Free Guacamole

A simple, fermented guacamole without the inflammatory nightshades. AIP safe.

Equipment

  • Food Processor

Ingredients
  

  • 4 medium avocados
  • 1/2 bunch fresh cilantro
  • 1/2 cup fermented onions with brine
  • 2 cloves garlic
  • 1/4 cup lime juice
  • 1 heaping teaspoon cumin
  • 1/2 teaspoon pink salt

Instructions
 

  • Combine all ingredients in a food processor and process until smooth.
  • You can leave this to culture for up to a day or enjoy it immediately. The ferment will slow down the browning of the avocados but won’t stop it completely so it should be eaten within a week.

  • 2 tbsp roasted peeled beetroot about the size of a golf ball
  • 1 scoop Chocolate Bone Broth Protein or 1 pack EQ Chocolate Pea Protein*
  • 1 scoop OM Master Mushroom Blend
  • 1 tsp OM Brain Fuel Mocha
  • 1 tbsp chia seeds
  • 1-2 tbsp coconut kefir yogurt
  • 1 scoop PectaSol-C* optional

Instructions
 

  • Blend in a high powered blender until smooth and serve!
