This is an easy tomato soup enriched with bone broth.  I can’t do nightshades so it is not for me, but it is one of those quick meals my family loves served up with gluten free or Einkorn grilled cheese Vegemite sandwiches.

Ingredients
  

  • 1 white onion
  • 1 tbsp refined coconut oil or ghee
  • 1-2 tsp pink salt
  • 4-6 cloves garlic or 1-2 tbsp crushed garlic
  • 1 tbsp provincial spices or Italian herbs
  • 1 tsp roasted granulated garlic
  • 2 cups chicken bone broth or vegetable broth
  • 2 cups 1 container BPA free San Marzano or organic tomatoes

Instructions
 

  • Dice onion and sauté in pan with coconut oil or ghee.
  • Add garlic, herbs, salt and sauté until browning (about 5 minutes)
  • Add broth, tomatoes and simmer for 5 more minutes.
  • Remove to high powered blender and puree until smooth.
  • Serve.

Hey friends!

As promised, I’m posting some of my family recipes in the absence of my ability to be creative with my own food at the moment… you know… the stuff I can actually eat.

This is a thin pancake, much like a cross between crepes and American pancakes.  We developed the recipe in the US originally and our kids loved it with fine ground einkorn flour or Bob’s Red Mill White Pastry Flour.  When we moved to Ireland it just would not turn out.  I think I made 8 batches before we figured out how it would work with the local flour and super creamy milk.  Eventually, we ditched the milk for milk kefir (a bit like buttermilk) and settled on a fine ground white spelt flour.  Now that we are back in the States I have gone back to my favorite Jovial Einkorn flour. It is sometimes out of stock through Jovial so I will from time to time pick it up from Thrive Market. I can’t currently eat grains but when I was having all the autoimmune flare ups early on it was the flour that I could eat without pain and inflammation.  I have become extremely carbohydrate sensitive in the past couple years, due to a little known protozoa I am currently fighting, called blastocystis hominus, which I have had since my first real trip overseas by myself as an exchange student in High School.  Bummer really… but I’m working on that and hope to get back to the Einkorn one day.  I whip these up in my Vitamix in a matter of minutes and pour them onto a large cast iron griddle or these crepe pans, which have proven to distribute heat the best over burners.

In the meantime, this is our family favorite pancake recipe… and it is bellissima.

Cultured Einkorn Kefir Pancakes

Equipment

  • High Powered blender
  • Cast Iron Skillet

Ingredients
  

  • 114 g Butter 1 American Stick or 1/2 European Block
  • 1 cup Milk Kefir
  • 2 cups water
  • 3 Eggs
  • 1 Tbsp lemon juice or squeeze of 1/2 lemon
  • 3 tsp vanilla
  • 1 1/2 tsp baking soda
  • 3 Tbsp Coconut Sugar/Sucanut
  • 1/2 tsp sea salt
  • 3 cups/415g white spelt or einkorn flour

Instructions
 

  • We do this in a Vitamix so I melt the butter on the cast iron griddle in a metal measuring cup and then throw in everything at once and blitz it. If you do it in a mixer or by hand follow this process:
  • Preheat your pancake griddle (or cast iron crepe pans as we do) to medium heat. Soften the butter first (I put mine on the stove to melt). Add the milk or kefir and water. Add the eggs and mix. Add the butter, baking powder, soda and salt. Squirt in the lemon and mix. Add the sifted flour and mix until smooth. Any flour works, but you will need to adjust the milk/water ratio to suit.
  • Pour the batter onto the pre-heated pans or griddle and cook until bubbling. Flip and repeat. They should look golden brown. Repeat until done! Fill and roll them with yogurt and fruit, maple syrup, lemon and sugar, or our kids favorite, nutella.
  • *Can substitute coconut sugar with rapadura, sucanut, maple syrup or raw honey.

Honey Kefir Sandwich Loaf (Ancient Grains, Nut-Free)

As promised, I am (re)posting one of my einkorn recipes.  Although I do not eat grains myself since developing autoimmune disease, this is still a much healthier recipe for families who are conscious of modern gluten and it’s ill effects on the gut.  Einkorn is much gentler and only has 14 chromosomes… so does not cross the blood brain barrier as does our modern American hard red wheat that has been so lovingly (NOT) sprayed with glyphosate to increase it’s yield in the past, thereby altering it’s DNA.  It is no longer healthy… it is the farthest thing from it. Ever wonder why Europeans can eat so much bread and still stay relatively slender and healthy?  And why they don’t have nearly as high a proportion of gluten-intolerance as we do here in the US?  Well… THAT is why.  Too many chromosomes.  Too many modifications.  Too much glyphosate.  And we subsidize it here so farmers don’t have a lot of motivation to grow different strains and grains, which would give us a variety in our diet and also prevent those few who would become truly intolerant from progressing to that.  I’ve said my peace.  (LOL)

This bread recipe is my kids (and husband’s) favorite for sandwich bread.  Homemade bread gets stale quickly so I use potato and milk kefir to keep it soft.  You can use either spelt or einkorn flour.  I prefer the latter and buy mine from Jovial Foods via their own website or from Thrive Market.  Sometimes I will use spelt.  We like VitaSpelt for a finer grain if we can find it, but good luck with that.  It is soft, nutty, nutritious and the gluten in einkorn and spelt are easier on the gut.  My family loves it slathered with grass fed butter, often with the addition of Vegemite.

Honey Kefir Sandwich Loaf (Nut-Free)

This is my kids favorite sandwich bread. Homemade bread gets stale quickly so I use potato and milk kefir to keep it soft. You can use either spelt or einkorn flour. I prefer the latter but because of it’s cost I most often use whole grain spelt. It is soft, nutty, nutritious and wheat-free. They love it slathered with butter, and often with the addition of Vegemite. Yields 2 loaves.

Equipment

  • Mixer with Dough Hook
  • Cast Iron Bread Pans
  • oven

Ingredients
  

  • 6 cups einkorn or white spelt flour
  • 2 1/2 tsp pink salt
  • 2 tbsp * 2 tablespoons raw honey or maple syrup
  • 1 tbsp dry active yeast
  • 1 1/2 cups milk kefir
  • * 2-3 potatoes, boiled and mashed (about 2 cups) (optional, but must adjust flour and water if not using)
  • * additional water for adjustments and flour for kneading

Instructions
 

  • Preheat your cast iron loaf pans in an oven set to 425°F
  • In a mixing bowl combine flour, salt and mix.
  • Make a well in the center and add honey, yeast and warm milk kefir or buttermilk and let sit for 5-10 minutes for yeast to activate.
  • Add your mashed potato, put on the dough hook and let it combine on the first speed until it forms a ball. If it’s too dry, add a tablespoon water at a time. If it’s too wet add a tablespoon of flour at a time.
  • Form the dough into two oblong balls and pinch at the bottom.
  • Remove the hot pans from the oven and place the dough pinch side down.
  • Turn off the oven and leave it open to cool while you transfer dough from bowl to pans.
  • Place the pans back in the oven and let rise for 40 minutes.
  • If you are not using cast iron, rub your pans with butter or coconut oil and do not heat them. Leave in a warm, but off, oven for 1 - 1.5 hours.
  • Bake at 385°F for 30-35 minutes, depending on your oven and whether you preheated it. Loaves are done when they are brown and slightly pulled away from the pan.
  • Take out immediately and let cool a bit before slicing.
